Summer can definitely be a challenge when it comes to consistently eating healthy. Between weekend cookouts, days spent out, and outdoor dining, I can understand why some people may find it hard to stick to any type of diet. Not having a good array of vegan summer recipes can also throw you off balance.
Now, don’t get me wrong – I love a good burger with some fries every now and then, but this summer I really wanted to stay committed to my health, and as I’ve seen time and time again, eating plain lettuce and cucumber simply isn’t going to cut it.
Therefore, I had to find different food that I actually enjoyed, easy enough for the summer but also filling enough to restrain my hunger.
